Smoked Salmon Artichoke Dip

This dip is one we often enjoy all year round.  It is our Families favorite snack dip and is wonderful on most things, from crackers or bread and even fresh veggies, like carrots and broccoli.  We hope you will enjoy it.  We are very PROUD that this dip was selected to be the recipe of the month in Fish Alaska Magazine, check your Jan. 2008 issue.  Please note, we also often will add some oven roasted garlic to it when we make it or will serve it with a few heads of fresh roasted garlic.  Please note, each species of salmon has a different flavor.  We have found Pink Salmon works great for the dip, as does Silver, but we have tried it with the 4 species that are caught here on the Kenai River ( King Salmon (chinook), Silver Salmon (Coho), Sockeye Salmon (Red), Pink Salmon (humpback)), and they all work great!!

 

Pumpkin Cheesecake

Talk about a perfect treat on the table around the holidays!  This delectable dessert will be on our table again soon.  We donated one of these great cheesecakes to the Annual Pie Auction here in Soldotna, and it seems to have gone over will outstanding reviews!  We hope you will enjoy it as much as we do.  

 

Crabmeat Stuffed Halibut

WOW.  This is one of those dishes that you cant get enough of.  Its filling but not to heavy or rich.  Works with both fresh or frozen crab or halibut!  We use a very similar stuffing for mushrooms and that is also wonderful, and if you don't have crabmeat, just add more mushrooms and its still very tasty!  Don't forget to roast some Garlic to enjoy with dinner!
